Vegan fajitas, made with seitan and veggies. They’re so tasty, satiating, easy to prepare and delicious with some tortillas and your favorite toppings.
I’ve been obsessed with these vegan fajitas, the recipe is so simple, they’re extremely flavorful, and they make a wonderful plant-based dinner. I could eat them all day long, though!
A fajita in Tex-Mex and Mexican cuisine is any grilled meat that is served as a taco on a flour or corn tortilla, which is usually cooked with onions and bell peppers and served with other condiments.
To make my fajitas vegan, I’ve usedseitan, which is really similar to beef (the most common meat used to make fajitas). However, any other meat alternative will work as well, like tofu, tempeh, mushrooms or even beans.
Please feel free to use any veggies you have on hand, but onion and red bell peppers are my favorite ones for this recipe. I’ve used red, green and yellow red bell pepper. However, you don’t need to use 3 different colors, 1 or 2 are okay and also any type of onion will do.
My favorite way to enjoy fajitas is serving then with some flour tortillas, but corn tortillas are really delicious as well (unfortunately I can’t find good quality corn tortillas in my area) and they’re a great option if you’re gluten-free.
How to make vegan fajitas – Step by step
- Addall themarinade ingredients to a bowlandstiruntil well combined (photo 1).Coverandrefrigeratefor at least15-30 minutes.
- Draintheseitan, but don’t discard the marinade.Cooktheseitanin askilletovermedium-high heatfor5-10 minutesor until golden brown (photo 2). Set aside.
- Addtheveggies,salt, andmarinadeto theskillet. Stir andcookovermedium-high heatfor5-10 minutesor until golden brown (photo 3). Add some oil if needed.
- Addthe cookedseitanto the skillet, stir andcookfor1-2moreminutes. Enjoy immediately just by itself or with tortillas and your favorite toppings or keep leftovers in the fridge or the freezer.
Pro tips

- If you can’t eat gluten, use any other meat alternative like tofu, tempeh, mushrooms or even legumes instead of the seitan.
- Use any veggies or oil you have on hand. If you’re oil-free, use some water orvegetable stockinstead.
- If you don’t like your food spicy, just omit the red pepper flakes. You can also add any other ingredient to make your fajitas spicy like sriracha, jalapeños, cayenne powder, etc.

You can serve fajitas with all kinds of ingredients and sauces, but these are my favorite toppings and sides:

- Vegan cheese (they’re delicious with myvegan Parmesan cheese)

The most delicious and popular way to enjoy fajitas is by taking a flour or corn tortilla, filling it with the fajita filling, adding your favorite toppings and enjoying them with your hands. Feel free to serve them with a side like beans and rice as well.
Can you freeze fajitas?

Ingredients
For the marinade:
- 1/2pound ofseitan(9 ozor250 g), sliced
- 1/8 tspground black pepper
- 1/8 tspred pepper flakes, optional
- 1 tspground cumin
- 1 tspdried oregano
- 1–2cloves of garlic, minced
- 2 tbsplime juice
- 2 tbspextra virgin olive oil
For the veggies:
- 1/2red onion, julienned
- 1/2green bell pepper, julienned
- 1/2yellow bell pepper, julienned
- 1/4 tspsalt
Instructions
- Add all the marinade ingredients to a bowl and stir until well combined. Cover and refrigerate for at least 15-30 minutes, ideally for 2 hours or even overnight.
- Drain the seitan, but don’t discard the marinade. Cook the seitan in a skillet over medium-high heat for 5-10 minutes or until golden brown. Set aside.
- Add the veggies (onion and peppers), salt and marinade to the skillet. Stir and cook over medium-high heat for 5-10 minutes or until golden brown. Add some oil if needed.
